Hydroponic Greenhouse and Garden

Hurawalhi grows part of its own produce in hydroponic greenhouses and open gardens on the island, supplying the restaurants with vegetables, fruit and herbs. The resort presents it as a transparency and food-miles measure as much as a culinary one, alongside its emphasis on organic and biodynamic sourcing. Canneli explicitly credits the greenhouse for much of what appears on its buffet.
