Saoke is JOALI's overwater Japanese restaurant, the first in the Maldives designed by Tokyo architect Noriyoshi Muramatsu of Studio Glitt. The kitchen works in a Nikkei register, combining a sushi counter with a teppanyaki grill and a deep sake list. It is the most formal of the island's dinner venues.
