UMAMI

UMAMI is the resort's Japanese fine-dining room, contemporary and low-lit around a cobalt blue bar where the chefs work in full view. The menu covers sashimi, nigiri and maki, robata-grilled Kobe beef and Australian lamb, plus teppanyaki counters prepared tableside. The cellar holds around thirty sakes alongside a curated selection of Japanese whiskies.
