Yuzu
Yuzu is the fine-dining room of the resort, built over the lagoon on the overwater island and devoted to Nikkei cuisine, the Japanese-Peruvian crossover. The menu turns line-caught fish into ceviches, tiraditos and sashimi carrying the acidity and chilli of Peru. It opened under Peruvian chef Anibal Torres when the overwater island was inaugurated in September 2019.
