SEA is the resort's signature underwater restaurant, a hexagonal glass dining room set beneath the lagoon where angelfish, turtles and soft corals drift past the windows throughout the meal. The kitchen serves international fine dining built around caviar, with signatures such as lobster ceviche with royal caviar and Australian Wagyu sirloin with imperial caviar. Guests reach the table by descending through the underwater wine cellar, which makes the arrival part of the experience.
